creamy carrot soup

Quick, simple, and creamy!

 

ingredients

5 dl broth

4 carrots

2-4 cm ginger

1 dl cashew

Soak the cashews at least 2-4 hours or overnight.

Boil the carrots and ginger, both peeled and cut into pieces, in the broth for 5-10 min until soft. Add the soaked cashews and process until smooth. Add more broth if needed to desired thickness. Spice with salt and pepper if needed and top with roasted seeds or other topping you enjoy.
