With emphasis on mini, these muffins are really small, but considering their main ingredient is nut, no worries, they contain calories enough. Depending on the sweetness of you peach and on how sweet you want your muffin to taste, 1 or 2 dates or other sweeter may be added.
ingredients (20-25 mini muffins)
1 dl cashew nuts (or 1/2 dl cashews, 1/2 dl almonds)
1 tsp flaxseeds, ground and mixed with 2 tsp water
2 tbsp blueberries, fresh or frozen
1/2 tsp baking soda
1/2 small peach (about 5 cm diameter)
Soak the nuts about 2 hours in water. Drain the liquid and process soaked nuts and peach to a smooth mixture. Add flaxseed/water mixture and baking soda and spoon about 1/2-1 tsp of the batter into each mold. Bake at 180 C for 8-10 min.
I haven’t tried making these in a larger version, but I am sure it would work perfectly by just increasing the time in the oven.
