tomato and mushroom pizza


A restaurant I walk by every now and then serve “cauliflower pizza” every Friday. Sounds delicious, doesn’t it? So I decided to make my own, cauliflower crust and topp with tomatoes and mushrooms, I have no idea if that’s what the restaurant serves since I never actually tried it or even seen it… but this is the result, quick, easy, and yummy!

ingredients (makes about 1 oven tray)

1 cauliflower head (about 1 l when processed)

4 eggs

1 dl water

1 dl coconut flour

1/4-1/2 tsp salt

2 tbsp finely chopped onion or onion grass (optional)


12 mushrooms, sliced

250 g cocktail tomatoes, halved of sliced

arugula, basil, sea salt

Process the cauliflower and mix with water, flour, salt and onion. Spread evenly on a parchment paper using a roller (with plastic film in between dough and roller) o spatula.

Bake at 225C for 10-15 min. Topp with mushrooms and tomatoes, bake another 10 min and top with arugula and/or basil or other greens before serving. ( I would recommend frying the mushrooms slightly before topping the pizza with them to avoid too much liquid being released on the pizza.)
