Summer is here and it is time for ice cream! Freezing coconut milk is like frozen yogurt but better!This is a blueberry-banana version, but as always, feel free to substitute with any berries you prefer.


400 ml coconut milk

1 banana

2-3 dl thawed or fresh blueberries

7 dates

Process dates and banana until smooth, add coconut milk and process as needed. Blend with the blueberries and freeze in an ice cream maker or in the freezer for a couple of hours. If you use the freezer, remember to take the ice cream out of the freezer for about 30-60 min to soften before serving.
