It’s Easter! And with Easter comes eggs. If you happen to be a fan of nutella, this is basically nutella-wrapped lemon flavoured almond. Enjoy!
1 dl almond flour
3 tbsp lemon juice
150 g hazelnuts
20 g (1/2 dl) cacao powder
25 g coconut oil
Process the date, almond flour and lemon juice.
Roast the hazelnuts in the oven, 180-200C 10 -15 min, watch them carefully not to burn. Rub the nuts in a towel to remove most of the shell. Process the nuts in a food processor until creamy, this takes quite some time, just keep processing until the oil is released and the mass becomes creamy. Add the cacao, oil, and dates, process until the dates are dissolved.
Roll balls of the almond mixture and cover with the hazelnut mixture, roll into balls or eggs, let cool and roll in cacao powder.
