butternut and papaya with kiwi-lime dressing

I admit, I have stolen part of this recipe…. the dressing is by Amir Kheirmands. Not that I ever met him, but I figured he seems a nice person and would’t mind me sharing this in a different version (the original can be found here). Don’t be mistaken by all the fruits in this recipe, it’s not a dessert!

ingredients

1 butternut squash

1 papaya

1 red onion

½ dl sun flower seeds

½ shredded coconut

1/3 dl coconut oil

dressing:

4 kiwi

1 lime

1 dl fresh coriander

(chili)

 

Cut the butternut into chunks or pieces, slice the onion, melt some coconut oil and blend with the butternut and onion. Sprinkle seeds and coconut on top and bake in the oven until soft, ~25 min (200C). When done, add the papaya, also sut into chunks and leave in the oven for just a few minutes until warm.

Process all ingredients for the dressing until smooth, pour over the vegetables (or serve the dressing on the side) and serve!
