This is a really quick and simple dish but the taste is definitely not simple. Pasta pesto is of course not exactly what it is but the zucchini with basil and garlic dressing tastes almost like it.
4 salmon fillets
300 g mushrooms
for the dressing
1 large clove of garlic
~1dl fresh basil leaves
3/4 – 1 dl olive oil
Boil the fillets in lightly salted water for about 5-10 min (depending on size and thickness).
Dice the mushrooms and fry in butter in a hot pan.
Grate the zucchini coarsely, bring enough water (lightly salted) to cover the grated zucchini to a boil and add the zucchini, boil about 2-3 min.
Mix the ingredients for the dressing using a mortar or mixer.
Drain the water from the zucchini, return to pan and add the dressing.
Serve the zucchini with the salmon and mushrooms.
